One of my standard go-to recipes for meal prep or taking a meal to someone is a white chicken chili my mom used to make. It’s healthy, it’s cheap, and it’s so tasty. It is also a crowd-pleaser during football games with friends or cozy movie nights. In short, you cannot go wrong with this recipe in our arsenal.

Cooking During COVID-19

While we may have a brighter light at the end of the tunnel, quarantine fatigue is real and if you are a parent cooking for your kids (on top of managing their schoolwork and 85 zoom calls a day) you might feel like you are at capacity during this time. This recipe is your lifesaver! It is filling and satisfying.

Also, when we get to that light at the end of the quarantine tunnel, this recipe will come in handy then as well. Adjusting back to work and socializing is going to be a slow process and having one less thing to think about in the kitchen may be the cure to some of the stress you’re feeling.

Depending on how spicy you like your chili you can moderate the cayenne and jalapenos to your liking. If you want to make chili night at your home an event, you can layer your chili with Frito’s or top it off with cheese, avocado, or sour cream.

  • Large Pot


  • 2 lbs cooked, chopped chicken canned chicken is fine and saves you time
  • 6 16 oz can great northern beans drained
  • 5 cloves garlic minced
  • 2 yellow onions chopped
  • 1 can green chilies drained
  • 3 cups chicken broth
  • cup chopped jalapenos no seeds
  • 2 tsp chili powder
  • 1 Tbs cayenne pepper
  • 1 Tbs cumin
  • 1 Tbs Tabasco
  • 1 Tbs Worcestershire sauce
  • 1 16oz can chopped tomatoes drained
  • 2 tsp oregano
  • salt and pepper to taste


  • Saute onion and garlic until the onions are clear.
  • Add remaining ingredients and cook on medium heat.
  • Stir every 10 minutes or so until mixture is how and well-blended (about 45 minutes)
  • Add extra chicken broth if your white chili is too thick.

White Chicken Chili Extra Notes

Feel free to use whatever kind of chicken you have at the moment. Rotisserie chicken, chicken breasts, or canned chicken all work well! Just be sure to shred it for the best consistency.

The same principle also applies to beans. If you don’t have northern beans, other white beans like cannellini, navy, or chickpeas will work well, too.

You can also make this recipe with your instant pot. After you sautee the onions and garlic, add the other ingredients and cook on high for 10 minutes.
