Here is a fantastic way to enjoy potatoes in a crispy-crunchy avatar! This scrumptious dish that is enjoyed all around Europe and the US got its start at the Hasselbacken restaurant in Sweden. Hasselback potatoes are exceptionally simple to prepare, and you can serve them as a quick side dish with pretty much everything. For the ultimate Swedish comfort food, try them with some Swedish meatballs!
Delicious Hasselback Potatoes
- 4 potatoes medium, with skin on
- 4 Tbsp olive oil can sub with butter
- salt and peppper to taste
- Preheat the oven to 250 degrees C (about 475 F) and line a baking sheet with aluminum foil or parchment paper.
- Brush the foil lightly with oil and set aside.
- Wash the potatoes thoroughly and then use a clean and dry cloth to dry it as much possible.
- Using a sharp knife, make very close cuts until 2/3 of the potatoes starting from the top. Make sure not to cut them all the way through!
- Repeat the process with the rest of the potatoes.
- Place the slit potatoes onto the prepared baking sheet and then generously brush them with oil.
- Season with salt and pepper, or other spices.
- Roast the potatoes for 45 minutes or more, until the potatoes turn fork-tender.
- Serve hot and enjoy!

Carefully slice the potatoes, but not all the way through, so you accidentally cut through the skin. Need a little help slicing the Hasselback potatoes? Try placing the potato between two chopsticks or wooden spoons. Once your knife hits a chopstick or wooden spoon handle, you’ve cut far enough.
Season with any herb or spice of your choice (such as rosemary, garlic, parsley, thyme, or chives) and then roast it until the potatoes turn nice and crispy. It is best to slow-roast your Hasselback potatoes to prevent them from becoming too brown and yet get a nice and evenly crispy texture on them. Also if you decide to cook them in cookware, make sure you use safe cookware, for example, porcelain enamel rather than plastic.
