Ingredients
  

  • 1 package red velvet cake mix
  • 1/2 cup canola oil
  • 2 tsp vanilla extract
  • 8 oz. package cream cheese ((softened))
  • 1/2 cup butter (softened)
  • 2 cups powdered sugar
  • 6 oz. semi-sweet chocolate chips

Instructions
 

Valentine's Day Whoopie Pies

  • Preheat oven to 350°.
  • Combine cake mix, eggs, canola oil and vanilla extract in bowl.
  • Mix thoroughly for 30 seconds. Continue stirring for two minutes until mix is consistent.
  • Cut half-inch hole in corner of food-safe plastic bag. Transfer dough mix into bag.
  • Squeeze 1x1 inch shapes (hearts for Valentine's Day) onto greased baking sheets. Space shapes about 1 inch apart.
  • Bake until edges of cookies are textured (about 6 to 8 minutes).
  • Let cookies cool on pans for about 2 minutes. Transfer cookies to cooling rack to let the cooling complete.
  • To mix the filling, mix cream cheese and butter until texture is consistent in a large bowl.
  • Incrementally add and mix in the sugar until mix is consistent throughout.
  • Stir in the semi-sweet chocolate chips.
  • Spread filling onto the bottoms of half of the cookies. Place remaining cookies on top and refrigerate until consumption.
