Valentine's Day Whoopie Pies

- 1 package red velvet cake mix
- 1/2 cup canola oil
- 2 tsp vanilla extract
- 8 oz. package cream cheese ((softened))
- 1/2 cup butter (softened)
- 2 cups powdered sugar
- 6 oz. semi-sweet chocolate chips
Valentine's Day Whoopie Pies
Preheat oven to 350°.
Combine cake mix, eggs, canola oil and vanilla extract in bowl.
Mix thoroughly for 30 seconds. Continue stirring for two minutes until mix is consistent.
Cut half-inch hole in corner of food-safe plastic bag. Transfer dough mix into bag.
Squeeze 1x1 inch shapes (hearts for Valentine's Day) onto greased baking sheets. Space shapes about 1 inch apart.
Bake until edges of cookies are textured (about 6 to 8 minutes).
Let cookies cool on pans for about 2 minutes. Transfer cookies to cooling rack to let the cooling complete.
To mix the filling, mix cream cheese and butter until texture is consistent in a large bowl.
Incrementally add and mix in the sugar until mix is consistent throughout.
Stir in the semi-sweet chocolate chips.
Spread filling onto the bottoms of half of the cookies. Place remaining cookies on top and refrigerate until consumption.
