Peaches and Cream Popsicles

It's hard to find sugar-free popsicles these days, but these are the perfect treat for toddlers.

  • 6 popsicle molds

Ingredients
  

  • 3 medium, ripe peaches
  • 1 cup coconut milk
  • 1-2 tbsp maple syrup or honey
  • 1 tsp vanilla extract

Instructions
 

  • Wash, peel, and cut the peaches into chunks. Place them in a blender or food processor and puree until smooth. Taste the puree and, if needed, sweeten with honey or maple syrup to your liking.
  • In a separate bowl, combine 1 cup of heavy cream or coconut milk with 1 teaspoon of vanilla extract. Stir well to mix.
  • Prepare your popsicle molds. Pour alternating layers of peach puree and the cream mixture into each mold. Start with a layer of peach puree, add a layer of cream, and continue alternating until the molds are filled.
  • To create a swirled effect in the popsicles, gently run a skewer or the handle of a spoon through the layers in each mold.
  • Place popsicle sticks in the center of each mold. Freeze the popsicles for at least 4 to 6 hours, or until solid.
  • To release the popsicles from the molds, run the exterior of the molds under warm water for a few seconds. Gently pull the popsicles out and enjoy.
