In a blender or food processor, combine the strawberries and raspberries. Blend until smooth.
In a separate bowl, whisk together the yogurt, honey or maple syrup, and vanilla extract (if using), until well combined.
Pour the fruit puree into the yogurt mixture and gently stir until fully incorporated.
Taste the mixture and adjust the sweetness by adding more honey or maple syrup if desired.
Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
Insert popsicle sticks into the molds.
Place the molds in the freezer and freeze for at least 4-6 hours, or until the popsicles are completely frozen.
Once frozen, remove the popsicles from the molds by running them under warm water for a few seconds. Gently pull the popsicles out. Serve immediately and enjoy!
