- 1¼ cups all-purpose flour
- 1¼ cups old-fashioned rolled oats
- 1½ tsp ground cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter softened
- ¾ cup light brown sugar packed
- 1 large egg
- 1 tsp pure vanilla extract
- 1 cup finely chopped peeled Granny Smith apples (1/4-inch cubes)
- 2 tsp fresh lemon juice
Preheat oven to 350 degrees F. Line two 18 x 13-inch baking sheets with parchment paper.
In a medium mixing bowl, thoroughly whisk together flour, oats, cinnamon, baking soda and salt then set aside.
In a separate large bowl, cream together butter and brown sugar until combined. Mix in egg and vanilla extract.
Toss apples and lemon juice in a small bowl. Add flour mixture to the wet mixture and mix until combined, then mix in apples.
Scoop dough out in 2 Tbsp drops onto prepared baking sheets, spacing cookies 2-inches apart. Slightly flatten them.
Bake one tray at a time until cookies are set, about 14 - 15 minutes.
Cool on the baking sheet for several minutes then transfer to a wire rack to cool completely. Store cookies in an airtight container.
