Ingredients
  

  • 1 15 oz can chickpeas
  • 1 15 oz can lentils
  • 1/2 cup shallots
  • 1 cup loosely packed, finely chopped parsley,
  • 1/2 cup kalmata olives (halved)
  • 1/2 cup cherry tomatoes (halved)
  • 1 cup cucumbers, chopped
  • 1/2 cup crumbled feta
  • 3 tbsp red wine vinegar
  • 3 tbsp lemon juice
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

Mediterranean-Inspired Lentil Salad

  • Toss together the peas, lentils, shallots, parsley, olives, tomatoes, cucumbers, and feta together in a large bowl.
  • Separately, whisk together the vinegar, lemon juice, olive oil, salt, and pepper.
  • Pour the dressing over the other ingredients and toss to coat!
