- 1 15 oz can lentils
- 1/2 cup shallots
- 1 cup loosely packed, finely chopped parsley,
- 1/2 cup kalmata olives (halved)
- 1/2 cup cherry tomatoes (halved)
- 1 cup cucumbers, chopped
- 1/2 cup crumbled feta
- 3 tbsp red wine vinegar
- 3 tbsp lemon juice
- 1/4 cup olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
Mediterranean-Inspired Lentil Salad
Toss together the peas, lentils, shallots, parsley, olives, tomatoes, cucumbers, and feta together in a large bowl.
Separately, whisk together the vinegar, lemon juice, olive oil, salt, and pepper.
Pour the dressing over the other ingredients and toss to coat!
