- 3 Tbsp pure pumpkin puree
- 3 Tbsp maple syrup or agave
- 1/2 cup peanut butter or nut butter of choice
- 1/2 cup sunflower butter
- 2 scoops vanilla protein powder
- 1/2 cup steel-cut oats
- 1 1/2 tbsp Trader Joe's pumpkin pie spice
- equal blend salt, stevia, cinnamon OR crushed nuts (for topping)
Pumpkin Pie Protein Bombs Recipe
Combine all the wet ingredients in a bowl, and mix well. (These are the first 4)
Incorporate dry ingredients until all are combined.
Chill in the fridge for 10-15 minutes.
Mix topping ingredients and set aside.
Use a spoon or melon ball scoop to shape bombs.
Chill bombs.
Roll in topping mixture.
Store in an airtight container lined with parchment paper so they don’t stick together. Keep them in the fridge and enjoy!
