Amazing Apricot Cake

  • 2 lbs fresh apricots (pitted)
  • 1 tbsp lemon juice
  • 1/2 cup butter (room temperature)
  • 3/4 cup sugar
  • 11/2 tsp pure vanilla extract
  • 4 eggs
  • 2 cups unbleached all-purpose flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 2-3 tbsp confectioner's sugar


Amazing Apricot Cake

  • Preheat oven to 350°F and grease a 9-inch springform pan and set aside.
  • Puree half of the apricots with the lemon juice and set aside. Quarter remaining apricots and set aside.
  • Combine butter and sugar with a mixer at medium-high speed until light and fluffy, about 4-5 minutes.
  • Add eggs and vanilla extract and beat until combined.
  • In a small bowl combine flour, baking powder, cinnamon, and salt.
  • Add dry mixture to the batter mixture and beat until combined. Add the pureed apricots and mix until just combined.
  • Pour the batter into the prepared pan. Evenly distribute the quartered apricots on top of the batter and bake for 55-60 minutes or until inserted toothpick comes out mostly clean.
  • Let it cool and dust with confectioner's sugar.
