  • 1 English cucumber diced
  • 4 roma tomatoes diced
  • 3 ripe avocados diced
  • 1/2 red onion diced
  • 1/4 cup fresh cilantro chopped
  • 3-4 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • salt and pepper to taste

Instructions
 

Tomato, Cucumber, and Avocado Salad

  • Combine cucumber, tomatoes, avocado, onion, and cilantro in a large salad bowl.
  • Toss with olive oil, lemon juice, salt and pepper. Serve in a bowl and enjoy!
