Cinnamon Apple Oatmeal Cookies

Ingredients
  

  • cups all-purpose flour
  • cups old-fashioned rolled oats
  • tsp ground cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup light brown sugar packed
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 cup finely chopped peeled Granny Smith apples  (1/4-inch cubes)
  • 2 tsp fresh lemon juice

Instructions
 

  • Preheat oven to 350 degrees F. Line two 18 x 13-inch baking sheets with parchment paper. 
  • In a medium mixing bowl, thoroughly whisk together flour, oats, cinnamon, baking soda and salt then set aside.
  • In a separate large bowl, cream together butter and brown sugar until combined. Mix in egg and vanilla extract.
  • Toss apples and lemon juice in a small bowl. Add flour mixture to the wet mixture and mix until combined, then mix in apples. 
  • Scoop dough out in 2 Tbsp drops onto prepared baking sheets, spacing cookies 2-inches apart. Slightly flatten them.
  • Bake one tray at a time until cookies are set, about 14 - 15 minutes. 
  • Cool on the baking sheet for several minutes then transfer to a wire rack to cool completely. Store cookies in an airtight container.
