Place 1/4 cup of cooled elderberry syrup in a medium bowl and quickly whisk in the gelatin powder.
Add 1/2 cup of hot water and whisk until fully combined.
Add the remaining elderberry syrup and whisk until fully combined.
Pour into molds or pan and refrigerate for at least 2 hours or until firm.
Take out of molds or pan (if you used a pan, cut into gummy-sized bites) and store in an airtight container, separating the layers with parchment paper.
