One of my standard go-to recipes for meal prep or taking a meal to someone is a white chicken chili my mom used to make. It’s healthy, it’s cheap, and it’s so tasty. It is also a crowd-pleaser during football games with friends or cozy movie nights. In short, you cannot go wrong with this recipe in our arsenal.

Depending on how spicy you like your chili you can moderate the cayenne and jalapenos to your liking. If you want to make chili night at your home an event, you can layer your chili with Frito’s or top it off with cheese, avocado, or sour cream.

Ingredients
  

  • 2 lbs cooked, chopped chicken (canned chicken is fine and saves you time)
  • 1 16 oz can great northern beans (drained)
  • 5 cloves garlic (minced)
  • 2 yellow onions (chopped)
  • 1 can green chilies (drained)
  • 3 cups chicken broth
  • 1/3 cup chopped jalapenos (no seeds)
  • 2 tsp chili powder
  • 1 tbsp cayenne pepper
  • 1 tbsp cumin
  • 1 tbsp Tabasco
  • 1 tbsp Worcestershire sauce
  • 1 16oz can chopped tomatoes (drained)
  • 2 tsp oregano
  • salt and pepper to taste

Instructions
 

White Chicken Chili

  • Saute onion and garlic until the onions are clear.
  • Add remaining ingredients and cook on medium heat.
  • Stir every 10 minutes or so until mixture is how and well-blended (about 45 minutes)
  • Add extra chicken broth if your white chili is too thick.

White Chicken Chili Extra Notes

Feel free to use whatever kind of chicken you have at the moment. Rotisserie chicken, chicken breasts, or canned chicken all work well! Just be sure to shred it for the best consistency.

The same principle also applies to beans. If you don’t have northern beans, other white beans like cannellini, navy, or chickpeas will work well, too.

You can also make this recipe with yourinstant pot. After you sautee the onions and garlic, add the other ingredients and cook on high for 10 minutes.
