Ingredients
  

  • 2.0 lbs medium shrimp (fresh is best, but frozen, thawed, then cleaned shrimp also works )
  • 4.0 bell peppers (color variety) (sliced into strips )
  • 1.0 large red onion (sliced into strips )
  • 1.0 tbsp olive oil
  • 8.0 tortillas (preferably corn)
  • 2.0 limes (sliced )
  • 1/4 cup lime juice (key limes or Mexican limes work best )
  • 1/4 cup orange juice
  • 1.0 tbsp olive oil
  • 2.0 cloves garlic (minced)
  • 2.0 tbsp shrimp fajitas seasoning blend
  • 2.0 tbsp chili powder
  • 2.0 tsp oregano
  • 2.0 tsp cumin
  • 2.0 tsp paprika
  • 2.0 tsp kosher salt
  • 2.0 tsp black pepper
  • 1.0 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chipotle powder

Instructions
 

Prep.

  • Mix together the marinade ingredients and add the shrimp. Toss to coat, cover with plastic wrap and refrigerate 15 minutes.
  • In a large sauté pan over high heat roast the bell peppers and onions in the oil until slightly limp and charred. Set aside.

Cook Shrimp

  • Preheat grill to 300°F and clean grill. Spray grill with cooking spray and grill shrimp, 1 to 2 minutes per side depending on size. Transfer to a bowl and keep warm covered with aluminum foil.
  • In a large grilling skillet over medium-high heat on the stovetop. Add shrimp and cook for 1 to 2 minutes per side depending on size. Transfer to a bowl and keep warm covered with aluminum foil.
  • Add shrimp back to the skillet with vegetables and toss to mix and warm through.
  • Serve grilled shrimp and vegetables with warm tortillas. Top with pico de gallo and guacamole (optional) and sliced limes.
