Easy Raspberry Baked Oatmeal Breakfast

If you haven’t tried baked oatmeal yet, you need to hop on the bandwagon! This recipe is quick to prepare and perfect for brunch or serving to the whole family on the weekend! You can even prepare this ahead of time and store it in the fridge until it’s time to bake and serve.

First, combine 1 1/2 cup of rolled old-fashioned oats, 1/2 cup brown sugar (or 1/4 cup of preferred liquid sweetener), 1 tsp baking powder, 1/2 tsp cinnamon, and 1/4 tsp salt in a large bowl. Then, mix 1/2 cup milk (or non-dairy substitute), 1/4 cup of applesauce, 1 egg, and 1 tsp of vanilla in a separate bowl. Continuing to stir, slowly add 1 Tablespoon of melted butter and fresh or frozen raspberries. Combine wet and dry ingredients and pour into a small sprayed baking dish. Finally, bake the oatmeal in the oven for 25 minutes or until golden brown.

Tip: Strawberry, blueberry, peach, and blackberry baked oats are also crowd pleasers! Follow the same recipe but swap in your favorite fruit.

  • 1 and 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter softened to room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 1/2 cup full-fat sour cream
  • 1 teaspoon pure vanilla extract
  • 3/4 teaspoon almond extract
  • 1/4 cup all-purpose flour Use for Topping

  • 1/4 teaspoon ground cinnamon Use for Topping
  • 2 Tablespoons unsalted butter, melted Use for Topping

Instructions
 

Crumb Cake

  • Preheat oven to 375°F. Grease and lightly flour a 9 Inch round cake pan.
  • Whisk the flour, baking powder, baking soda, and salt together. Set aside.
  • In a large bowl use a hand mixer or stand mixer to beat the butter and granulated sugar together on high speed until smooth (about 2 minutes). Add the eggs, sour cream, vanilla extract, and almond extract. Beat on medium-high speed until well combined (It may look curdled; that’s okay). With the mixer on low speed, mix in the dry ingredients until smooth. Do not overmix. The batter will be thick. Spread into prepared pan. Set aside.

Crumb Topping

  • With a fork, mix the flour, brown sugar, and cinnamon together. Stir in the melted butter until crumbs form.

Final Steps

  • Top the cake batter with raspberries and sprinkle on the crumb topping.
  • Bake in preheated oven for 35-40 minutes. Baking times may vary. The cake is done when a toothpick inserted in the center comes out clean.
  • Remove cake from oven and cool for a few unites before serving.
