Ready, Set, Mango! Delicious Ideas for Mango Recipes

Mango is my favorite fruit. And I love fruit. Mango smoothies, mango sorbet, mango salsa, mango margaritas, if it has mangoes, I'm in. When I traveled to Colombia, street vendors would sell fresh mangoes on sticks, some seasoned with salt. Now that's my kind of street food. Check out these mango recipes that will rock your world:

Mango Recipes Go Sweet and Spicy

Mango-Jalepeño Pepper Jelly

Pepper jelly has hit the scene as the perfect addition to charcuterie boards everywhere. But it's actually one of the most versatile condiments you can use to add some extra sweet heat to a dish! Top your cream cheese bagel, burger, grilled cheese, tortilla, or hot biscuits.

Mango-Habañero Aioli

Aioli is essentially mayo with all the extra spices and fixins'. For this one, in a food processor, blend 1 cup of frozen mangoes, 2 tbsp fresh lime juice, 1 tsp of granulated sugar, 1 tsp smoked paprika, 1 tsp curry powder, 1 tsp smoked salt, 1/2 tsp cayenne pepper, 1/2 tsp black pepper, and 1 small habanero chile (seeded and chopped). Mix with one cup of mayonnaise, and you've got a sweet and spicy aioli, perfect for topping sandwiches and burgers!

Fish Tacos

Fresh mango salsa is the MVP of fish tacos. It gives that tangy bite to milder fish. With crunchy lettuce and some kick from the mango salsa, your fish tacos will never be the same. If you want to mix things up, try the tacos with shrimp instead.

Grilled Chicken With Mango Salsa and Coconut Rice

I can't think of a better trio than this. It'll take you right to an island vacation. Coconut milk gives an irresistible richness. The freshness of mango salsa really pairs nicely with the grilled chicken and rich rice.

Mango Chicken Stir-Fry

Grilled Pork With Mango Chutney

This tasty condiment is a perfect pairing for chicken, pork, lamb, or even veggies. My personal specialty is serving it with grilled pork. For some spice, add ginger, garlic, and red chili pepper flakes. For tangy-ness, add mangoes and vinegar. Finally, add some sweetness with raisins and sugar.

Mango-Lime Chicken with Black Beans and Cilantro Sticky Rice

This is tender chicken simmered in a flavorful mango sauce tossed with lime or lemon juice, garlic, brown sugar, and a pinch of cayenne for some heat. Paired with some protein-filled black beans and sticky rice garnished with fresh cilantro, you have a new go-to summer meal!

Mango Recipes for Snacks and Sides

Mango Sticky Rice

This sweet dish has the potential to complement a spicy dish, and it's delicious on its own! Add 1-1/2 cup rinsed, glutinous sweet rice, 1 cup (from 1 can) of coconut milk, and 1/2 cup water to a medium pot to soak for 30 minutes. Bring to a boil over med-high heat, then reduce to low heat. Simmer with a slightly ajar lid for 9-10 minutes until rice is tender and the water's been absorbed.

In a separate medium pot over medium heat, bring the remaining coconut milk (from the original can), 2/3 cup sugar, and 1/4 tsp kosher salt to a boil. Stir until sugar is dissolved. Keep cooking until there are lots of bubbles and the mixture is slightly thickened. Pour ½ cup warm coconut mixture over rice and gently stir to combine. Let it sit until the coconut milk is absorbed and rice has cooled to room temperature, about 30 minutes, up to 2 hours.  When ready, serve rice with sliced mango. Pour remaining sauce over rice and top with sesame seeds.

Avocado-Mango Guacamole Salad

This is the perfect summer side for burgers, grilled pork, or even bbq chicken! In a large serving bowl, whisk 1 tbsp balsamic vinegar, 1 tbsp lime juice, and salt and pepper to taste. Slowly whisk in 2 tbsp EVOO. Toss in 2 cubed mangoes and 2 cubed avocados, and 1/2 a small, diced red onion.

Yum Mamuang

This vegan mango salad has amazing Thai flavors. You'll want to use green mangoes for the desired flavor/texture. Toss 1 green shredded mango, 3/4 cup toasted peanuts (or pistachios or cashews), 1 chopped chili pepper, 1/2 tsp sugar, 1-2 chopped shallots, a pinch of salt. Add lime juice to your taste. You can also add ground chili for a spicier salad!

Chia Seed Pudding

Chia seed pudding is versatile and so very easy to make!  It's especially decadent with coconut milk. Try adding coconut and mango, two flavors that really complement each other, especially in sweet dishes. You could ramp up the fruity flavors by adding any fruit from the pantry. This could be blueberry, peach, strawberry, pineapple, nectarine, banana, or raspberry flavors from fresh fruit. Check out more ideas for yummy chia seed pudding!

Mango-Yogurt Pudding with Lucuma and Chia Seeds

This refreshing recipe has no processed sugars but still satisfies a sweet tooth. Slice 3 Ataulfo mangoes into 1/2 inch pieces and reserve 1/2 cup. Puree remaining mango, 1/3 cup plain greek full-fat yogurt, 2 tbsp lucuma powder, 2 tbsp lime juice, and a pinch of salt in a food processor scraping down the sides. Add a splash of water if needed until the mixture is smooth. Divide between 2 glasses. Chill pudding for at least 1 hour to firm up, if needed. Toss reserved ½ cup mango with 2 tbsp agave syrup,1 tsp chia seeds, nigella seeds, a tiny pinch of salt, and 2 tbsp lime juice in a small bowl. Garnish pudding with mango mixture.

This is a popular, traditional, yogurt-based drink that originated in India. Lassi is a blend of yogurt, water, spices, and sometimes fruit. Mango lassis are more like milkshakes.

Mango Kulfi

Kulfi is thought of as a traditional Indian ice cream made with milk, sugar, nuts & cardamoms. It's denser and creamier than other countries' typical ice cream.

Aam Panna

This is a tasty and healthy Indian drink famous for its ability to fight the effects of intense heat. Its made from raw mangoes and yellow to very light green in color. Often, cumin and mint leaves are added, which enhances the color. It's helpful to replenish sodium chloride and iron during the excessive sweating of hot Indian summers.
