Lambs

Little Lamb Cupcakes: Use marshmallows to make the wooly fluff on these little lambs. You could also use a round tip piping tool to make fluffy little puffs with white frosting.

Legacy of the Lamb Cake: Admittedly, these aren’t cupcakes. But if you were a child who attended church in the ’80s and ’90s, you may be familiar with the traditional “lamb cake.” You know the one. Someone had a cake pan specifically shaped like a lamb. Probably an older lady that everyone loved. Check out Nina Simone’s ode to this classic dessert.

Bunnies

Bottom’s up: Not much is cuter than little bunnies…okay, maybe little bunny butts with fluffy tails. Have your little bunnies diving into your cupcakes! For the bunnies, you could use blobs of white icing, or white-chocolate-dipped Oreos Pipe small trails of green icing to look like grass. If you’re not confident in your ability to make stiff icing, just green icing that’s spread regularly does the trick just as well. Or, you could have the bunny diving into the dirt and use Oreo cookie crumbs instead.

Hunny Bunny Cupcakes: Start with vanilla cupcakes and buttercream icing. While they’re just as cute sans fur, you could dip the frosted cupcakes into the coconut to give it a furry effect. You could also use white sprinkles if you don’t like coconut.

For the ears: with a pair of clean scissors, cut a regular marshmallow diagonally in half. Be sure to clean the scissors between cutting, so you get a neat edge for the ears. If things get messy, try dampening the blades. Dip the cut side of the marshmallow into a bowl of pink sugar. Squeeze it as you dip it to prevent sugar around the edges. Now, attach them to the top of the cupcake. You could keep them simple (like the ones shown above). However, two mini chocolate chips work perfectly for eyes, and a small piece of rolled fondant dipped in pink sugar works great for a nose!

Chicks

Peeple Pleasers: Marshmallow peeps are a divisive sweet treat. You either love them, or you hate them. Hoping that you love them because this chick cupcake idea is adorable. Use pastel-colored frosting to match the colors of the chicks!

Cheery Easter Chick Cupcakes: It’s easy enough just to pop a marshmallow peep onto a cupcake. But where’s the showmanship in that? These are great if you want to try your hand at that lemon cupcake recipe you’ve been eyeing. If your family isn’t too keen on lemon flavoring, you could always bake the classic vanilla with just a little yellow food coloring. You could also use coconut with some yellow food coloring to make the feathers’ texture! Mini, brown, candy-coated chocolates work for the eyes, and orange candies cut into triangles make excellent beaks.

Ingredients
  

  • 1/2 cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1-1/2 tsp vanilla extract
  • 1 1-2 cups all-purpose flour leveled
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 1 1-2 tbsp lemon zest
  • 1/3 cup fresh lemon juice
  • 2.5 cups Vanilla Buttercream frosting

Instructions
 

Lemon Easter Cupcakes

  • Preheat the oven to 350°F. Line a 12-cup muffin pan with cupcake liners.
  • Using mixer, beat the butter and sugar together on medium-high speed in a large bowl until creamed, about 2 minutes. Scrape down the sides and bottom as needed.
  • Add eggs and vanilla extract, then beat on medium-high speed until just combined (about 1 minute). Scrape down the sides and bottom of the bowl as needed. Set aside.
  • Whisk the flour, baking powder, and salt together in a medium bowl. Pour the dry ingredients into the wet ingredients. Start the mixer on low speed, then slowly add the milk, lemon juice, and lemon zest. Be careful not over-mix.
  • Spoon batter evenly into 12 cupcake liners, filling them about 2/3 full and bake for about 18-22 minutes. Insert a toothpick into the middle and it will come out clean when they’re done. Allow to cool completely before frosting.
  • Frost cooled cupcakes with vanilla buttercream. Top with lemon zest right before serving.
