Blueberry Recipes for Dessert

Blueberry Cobbler: There’s nothing like a cobbler hot out of the oven paired with cold, vanilla ice cream. These are great because it’s so easy to make and you don’t have to worry about a fancy presentation. Cobblers are also typically a little less sweet than other desserts, which is why they balance so well with ice cream. First, melt 1/2 cup of butter and place in a baking dish. Mix 1 cup self-rising flour, 1/2 cup sugar, and 1 cup of milk in a bowl until combined; pour batter over melted butter. Bake at 350F for one hour, let it cool, then enjoy!

Blueberry Pie: Making a blueberry pie from scratch is much easier than you would think! You can use fresh or frozen blueberries in this recipe. Blueberry pie always makes me think of being home for holidays, and the best part is the sweet, aromatic smells that drift from the kitchen while it’s baking. Check out this delicious blueberry pie recipe from Elieen Gray on her Baking Sense blog. Remember that using a packaged crust can be a shortcut that saves you some time and effort, and can taste just as good!

Fresh Blueberry Ice Cream: The beautiful thing about homemade ice cream is how few ingredients it takes to make! And you’ll be so glad you opted for homemade over store-bought. First, put 2 packs of blueberries, 1 cup, sugar, and a pinch of salt in a saucepan over medium-high heat, stirring occasionally. Once it comes to a boil, lower heat and let it simmer for 10 minutes. Allow it to cool, then pulse in the blender. Combine the blueberry mixture with 1/2 cups of heavy cream, 1 cup of whole milk, and 1 tbsp fresh lemon juice. Cover and chill overnight. Pour into an ice cream maker and make according to the manufacturer’s instructions.

Blueberry Cheesecake: This is one of my favorite desserts. It’s creamy, rich, and the perfect after-dinner treat. If you want to make the flavors more subtle, opt for a blueberry glaze or drizzle. This dessert isn’t necessarily the easiest to make, but it’s definitely worth a try!

You Can Grow Your Own Blueberries

I love the corner of my backyard where my blueberry bushes live. One of the best parts of summer is venturing out there and searching for the darkest blue, ripest, juiciest berries. My dog will always accompany me, hoping that a stray blueberry finds itself conveniently within his reach. If you decide to grow your own blueberries, plant them in a moist, well-drained, sunny, sheltered spot with acidic soil. They’re also great because they can be easily grown without pesticides!
